Vegetable Powders and Dehydrated Vegetables From Barry Farm Foods
Air-dried products are dehydrated under a constant stream of warm air until the moisture content is reduced. Herbs, spices, vegetables and fruits can all be air-dried. These products are free-flowing and retain much of the natural color and flavor of the fresh product.
Air-dried products are suitable for soup, dips and sauce mixes, bakery mixes, and canned foods.
Freeze-dried vegetables are produced using a refrigerated vacuum system which removes the water from the product while maintaining the structure, color, and flavor of the piece. Freeze-dried vegetables are especially suited to applications where particulate size and shape are important, such as instant soups, potato and pasta dishes, snack mixes, vegetable dips and dressings. The ease of reconstitution
make them ideal for dry blends.
Drum-dried vegetables are ground to a paste, then dried on double-cylindered drum dryers at relatively low temperatures. They are available in either
powder or flake form. They are useful additions to cereals and breads, fillings, soups, sauces, baby foods and baked goods.
